This clever trick helps you keep track of which scallop was placed in first, making it easier to flip them later!
  2. Cook the First Side: Let the scallops sear for about 2 minutes without moving them. During this time, season the top side with salt and pepper again. You should start to smell a lovely aroma wafting through your kitchen!
  3. Flip and Finish Cooking: Once that beautiful, golden crust has formed, it’s time to flip! Follow the same clockwise pattern to remember which scallop to flip first. Cook for another 45 to 60 seconds on this side.

Instructions

  1. Heat your pan really hot on med-high heat and add your tablespoon of olive oil
  2. With the scallops sitting on a plate to the side, sprinkle salt and pepper over scallops as desired
  3. When the pan is hot, add scallops, seasoned side down, starting at the furthest part of the pan away from you and set scallops in going clockwise (set in pan like time on a clock) to keep track of scallop cook time
  4. Sear your first side for about 2 minutes while seasoning the other side with salt and pepper again. Remember we set them clockwise in the pan so when flipping, follow this same pattern.
  5. Sear for another 45-60 seconds after flipping
  6. Turn your heat off and add 1 TBSP of butter, tilting the pan to make sure all the scallops soak in a little bit of butter for flavor for about 30-45 seconds
  7. Transfer scallops to a plate and serve with your desired entrée.
